Cheezerella Mozz Replacement Solutions

Cheezerella is an optimised blend of dairy and plant ingredients, including cheese, milk proteins, milk fat, plant starches, and plant oils. It is used to replace or partially replace mozzarella in pizza and mozzarella bite applications.

Functional characteristics of Cheezerella can be modified to suit different regions, oven types, cooking times, etc.:

  • Burning effect

Ultranor™ is Kerry Dairy Ireland’s grass-fed milk protein range suitable for many food and beverages applications.

The casein protein in Ultranor MPI and Ultranor MPC is 100% micellar: excellent heat stability and microbiological characteristics; clean and neutral flavour; low lactose.

  • Ultranor milk protein isolates and concentrates are designed for inclusion in protein enriched beverages and powders
  • Ultranor TNT milk proteins are designed for high protein bar applications
  • Ultranor Beta Kappa is a protein fraction enriched in beta and kappa casein for use in infant nutrition
